Chocolate Gugelhupf

I adjusted one of my great-grandmother’s cake recipes to please my kids… they wanted chocolate!
I will eventually post the original recipe.

Ingredients:

  • 7 oz (200 gr) Butter
  • 1 cup sugar
  • 4 eggs
  • 1.5 cups flour
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 3.5 oz (100 gr) melted chocolate
  • 1 oz melted chocolate to decorate – optional

Direcions:

  1. Separate the eggs.  Place the yolks in a small bowl, and the whites in a big one.
  2. Chocolate Gugelhupf 1Beat the egg whites with a mixer until peaks form. (Tip: Most recipes ask you to do this at the end, but by doing this first, you avoid having to wash the blades at the end, before beating the egg whites!)
  3. In a gib bowl, blend the butter with the sugar.
  4. Add the eggs and blend for about a minute.
  5. Measure the flour, add the baking powder, and mix with a spoon to blend it well.
  6. Add the flour mix and the milk and blend for about a minute.
  7. Add the rest of the ingredients, and mix with a spoon.
  8. Place the batter in a Gugelhupf mold (spread a little bit of butter first, and sprinkle a little bit of flour first).
  9. Chocolate Gugelhupf 2
Bake in a preheated oven at 350ºF (180º F) for half an hour. Always check with a toothpick to make sure that it is ready!
  10. Decorate with the extra melted chocolate.

Filet with peppers

Filet with peppers

This dish I made up once because I wanted to make something similar to my mom’s roast beef.  It is really easy to make!

I’ll post the roast beef eventually, but I must warn that it is a little bit more complicated to make but it’s really worth it.

Ingredients:

  • 1 pork filet
  • 2 red peppers – chopped
  • 2 medium onions – chopped
  • 1 teaspoon salt
  • pepper
  • garlic powder
  • olive oil
  • 1 cup water

Directions:

  1. Wash the filet and pat dry.
  2. Place the filet in a pan, and sprinkle salt, pepper and powdered garlic.
  3. Sprinkle a little bit of olive oil on top.
  4. Arrange the chopped onions around the filet, and then add the chopped peppers.
  5. Add the water.
  6. filet with peppers - ready for oven
Bake in 350ºF (180ºC) oven for 1 hour, checking to make sure that there’s enough water in the pan, and adjusting the temperature in case you notice that it is browning too fast.
  7. When ready, put the filet on the side, and half of the peppers and onions.
  8. Make sure there’s about 1/2 cup of liquid in the pan (add water accordingly), and with a stick mixer, blend the remaining onions and peppers to make a nice sauce.  Taste for salt, and then strain it for a smoother sauce.
  9. Slice the filet in medallions and arrange on a plate.  Add sauce and then decorate with the remaining onions and peppers.
